| Exotic things need exotic attention and it holds true for green tea too. For best result, follow the procedures listed below. |
TEA BAGS
ICED TEA - SENCHA
|
+ Fill the container with one liter (34oz, 2.1pt) of pure water.
+ (A container with a tight lid is best.)
+ Add one tea bag.
+ Put the container in a refrigerator and leave it there for about 20 to 30 minutes.
+ Stir the tea or shake it until the color of tea turned into hunter green.
+ Remove the bag.
+ Pour it into a glass and serve.
+ Store the leftover tea in the refrigerator and consume it within a couple of days.

ICED TEA - HOUJICHA
|
+ Fill the container with one liter (34oz, 2.1pt) of pure water.

OTHER TEA BAGS

+ Place the bag in a teacup and fill the cup with hot water.
+ Steep for 2 minutes.

MATCHA
|
+ Place the weighed green leaves inside the tea bowl.
+ Pour hot water with temperature and amount recommended for each tea.
+ Stir the contents briskly with the tea whisk.

SENCHA / HOJI CHA / BAN CHA
|
+ Place the weighed green leaves inside the teapot.
+ Pour hot water with temperature and amount recommended for each tea.
+ Steep for 10 seconds to 1 minute, depending on the type of tea.
+ Pour the brewed tea in your cup and serve.

GYOKURO
|
+ Bring water to a boil in a kettle.
+ Pour 1fl.oz(30cc) hot water into yu-samashi, which is a boat-shaped bowl and used to cool down boiled water to the right temperature.
+ Pour hot water into a teapot and cup to warm.
+ Discard the water from the teapot and cup.
+ Place the 1tsp(4g) of green leaves inside the teapot.
+ When the water temperature in the yu-samashi goes down to about 100F(40C), pour the water into the teapot.
+ Steep for 2 minutes.
+ Pour the brewed tea in your cup and serve.

| For second infusion, brew the tea with a 1.5fl.oz hot water, about 120F. For third infusion, brew the tea with a 2fl.oz hot water, about 160F. The taste will be a little bitter for the third infusion. |

| Water temperature is vital for the right flavor. Generally, low temperature is required for high grade teas with a small amount of water. On the other hand, high temperature is required for low and medium grade teas with larger amount of water. In any case, water should be boiled once and cooled down to the temperature recommended for each tea. |
| High grade green tea is delicate. Handle it tenderly. Since green tea strongly absorbs smell, it is recommended that you store your tea in an airtight container. Also, we advise you to consume your tea within two to four months. Do not store your tea with foods that have strong smells unless it is packed tightly. |
| Japanese or Chinese style, small porcelain teapot is recommended to brew your tea to savor the highest level of aroma and exquisite flavor. |
